On a Sunday morning in the farmer's markets of Zurich, Switzerland, bakers pulled steaming warm golden roasted brioche buns from their mobile ovens and stacked them tantalizingly for passer's by. This particular pile consisted of some of the biggest, most golden and most enticing brioche I had ever had the pleasure of laying my eyes, and taste buds, on. The golden glaze boasted a thick and rich crust, the shell for the sweet warm doughy bread on the inside.
