Probably one of the most versatile ingredients to dishes all over the world for centuries, if not millenia, the potato, affectionately referred to as 'spud', has fed hundreds of millions and resulted in infamous famines. A member of the nightshade, or solanum, genus the potato, or Solanum tuberosum, originally was a native of the Andes region. Nowadays it is the worlds fourth largest crop and is grown all over the world. Popular cooking methods include roasting, boiling, mashing, stewing, frying and steaming.
This pile of freshly harvested potatoes was on display for sale at a farmer's market in Zurich, Switzerland. These were so fresh you can still see the soil and earth that remains within the potato skin folds and creases, adding some fantastic photographic detail and contrast.
